We were a little ahead of the lunch rush, our 2-year-old was a subdued, and so we took the opportunity on a place we had observed in the newest Quail Hill Village mall in Irvine, perhaps not far from where the Hillcrest (I-405) and Santa Ana (I-5) Freeways converge in central Orange County, California. The center sprang up in the darkness of the Shady Canyon estates seemingly overnight. It's from the way -- you do not just happen by. Therefore packed, we quickly altered our sit-down order to to-go, hustled our now not-so-subdued little person out and headed home to probably the most appealing take-out we'd had in weeks. Jungle curry with chicken ($12) was cool and clean (we purchased the milder green curry; red and orange can be found). Spicy orange lawn chicken ($12) was zesty and new. Conventional mat japanese ($11) -- my wife's standard -- fragrant and nicely portioned with shrimp, egg, tofu and noodles. Therefore, we went back, this time for lunch, without the boy. Again, the cafe was full, though without the infuriating meal break. Again, our dinner was delicious: more green curry and pad thai -- we are creatures of habit. By the briskly efficient service (though the foods could arrive at a far more languid speed, testimony to the new cooked-to-order kitchen). And by the very clean ingredients, performed in light sauces. The cooking areas just about every day, co-manager Jade Tam told me. Sometimes the market, sometimes a specialty shop, sometimes a farmers market. Then, well, living kept us away for a few months, until I spoke with director Amy Lam. Once we talked about the restaurant's expansion plans and demonstration themes, Amy asked, ``Do you understand Julie and Pat?'' I know Julie's flavor in food and restaurants just well enough that this small nugget of information -- that she and Pat are regulars enough to be on a first-name basis -- said to have back there, pronto. We were again wowed by fresh flavors. We began with the Thai bamboo sampler appetizer ($14), a mixture of four from the selection beef and chicken satay, (spring rolls, summer rolls, and silver bags -- crispy wontons tangled up like small Gold Rush-era gifts). Our shrimp in spicy apple sauce ($16) was nice, but simple. We replaced from the typical pad japanese, buying the ``new edition'' type (egg noodles in the place of rice noodles. $11).
